Crispy Chicken

This flavorful chicken is delightfully crispy, thanks to the crisp rice cereal coating. Delicious with garlic mashed potatoes! One other note for any leftover chicken-reheat in the oven for a few minutes. The microwave tends to give it a "rubbery" texture. You want to crisp up that top. This recipe, along with my honey-pecan and even cracker crumb chicken, are perfect to throw on top of green salads. I make extra chicken, chill it, and slice it into thin strips-add some ranch dressing and you've got a great lunch! It's really good!

1-1/2 cups crisp rice cereal, coarsely chopped
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon thyme
1/4 teaspoon poultry seasoning
4 tablespoons melted butter
4 boneless, skinless chicken breasts

Combine cereal, flour and seasonings in a shallow bowl. Place butter in another bowl. Dip chicken in butter, then cereal mixture. Place in an 11x7 baking dish sprayed with cooking spray. Bake at 400 for 30 minutes.
